Oven-roasted Lavraki

 Oven-roasted Lavraki (Mediterranean sea bass) is a simple yet flavorful dish that brings out the best of Greek cuisine! Here’s a delicious recipe to try:

Ingredients

  • 2 whole Lavraki (sea bass), cleaned and gutted

  • 1 lemon, sliced

  • 4 sprigs fresh oregano

  • 5 tbsp olive oil

  • 50 g coarse salt

  • 100 g water

  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (390°F).

  2. Sprinkle the cavity of each sea bass with salt, pepper, lemon slices, and oregano.

  3. Rub olive oil on the outside of the fish and coat with coarse salt.

  4. Pour water into a baking pan and place a hot rack inside.

  5. Place the fish on the rack and roast for 15-20 minutes until flaky.

  6. Remove from the oven, discard the coarse salt, and serve with a ladolemono dressing (lemon-olive oil sauce).

This dish pairs beautifully with roasted potatoes or a fresh Greek salad.
